Influencing factors on pigment synthesis and skin colour development in fruits: genetics, environment and cultivation systems

Colour is one of the most important criteria used by consumers to evaluate quality of horticultural produce. Similarly, skin colour is used by the market as attribute to classify fruits and berries in different payment categories; in this context, bad colouration implies in lower prices and less payment for the growers. Thus, growers adopt different technologies to increase synthesis of epidermal pigments and ensure highest colour degree in the final products. In this literature review the impact of different factors – including genetics, environmental factors and cultivation systems – on the colour development are presented. Finally, specific measures such as the target-use of fertilizers and biostimulants is presented and discussed.
